Pol Roti: The island's favourite flatbread
In Sri Lanka, coconut flatbread locally known as Pol-Roti, is a common home-made variety of flatbread. It can be had served as a snack or for breakfast, lunch, and dinner.

What is Pol Roti?
Pol-Roti, as it's locally known, is basically a rustic flatbread made with coconut, while households tend to add their unique twist to the initial flour mix, such as onions or chillies.
Make your own Pol Roti:
Ingredients:

- 3 cups-All-Purpose Flour
- 1 cup-Cold Water
- 1 cup-Freshly Grated Coconuts or Desiccated Coconut
- 1 Tbsp-Canola Oil
- 1/4 cup
- Salt
Instructions:
-Step 1 Sift the All-Purpose Flour (3 cups). Then add Salt (to taste), Coconuts (1 cup) and Canola Oil (1 Tbsp) to the bowl and mix well.
-Step 2 Add Water (1 cup) a little at a time until it forms a dough. The dough should be like play-dough consistency, not sticky. Add condiments and flavourings of your choice (i.e: onions or chillies)
-Step 3 Shape the dough into balls, then flatten the dough ball with your hands into a thick disc.
-Step 4 Heat a heavy-duty skillet or cast-iron skillet on medium-high heat. Once hot, cook the Roti on both sides until you get them well browned.
-Step 5 Cook the rest of the Roti.
